White Hot Chocolate

  • 3 cups half-and-half cream divided (1/4 cup & 2 3/4 cups)
  • 2/3 cup vanilla baking chips
  • 1 cinnamon stick
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • Ground cinnamon


Place 1/4 cup cream, vanilla chips, cinnamon stick and nutmeg in saucepan. Stir over low heat until chips are melted.  Discard cinnamon stick.  Add remaining cream.  Stir until thoroughly heated.

Remove from the heat, add vanilla and almond extracts.  Pour into 4 cups.  Garnish with ground  cinnamon

Cinnamon Cider

  • 1 can frozen apple juice (12 oz)
  • 1 can frozen cranberry-apple juice (12 oz)
  • 1 can frozen lemonade (12 oz)
  • 9 cups water
  • 5 cinnamon sticks
  • 6 whole cloves
  • 1 teaspoon ground nutmeg
  • 1/3 cup cinnamon schnapps


Place all ingredients expect schnapps into a dutch oven. Heat until boiling, reduce heat and simmer 15 minutes.  Remove cinnamon sticks and cloves.  Stir in schnapps.

Cheery Hot Chocolate

This delicious hot chocolate will warm the kids right up after making their very own Frosty the Snowman.

Ingredients:

  • 2 tablespoons chocolate syrup,
  • 1 & 3/4 cups of milk,
  • 1 large marshmallow or 1 teaspoon creamy peanut butter
Combine ingredients in a small saucepan. Cook over medium heat, stirring constantly, until hot chocolate is warm. Pour into a mug and serve.


Eggnog

The following recipe serves from 8 to 10 people.
Ingredients

  • 6 separated eggs,
  • 1 / 2 to 3 / 4 of a cup of sugar,
  • 2 cups of heavy cream,
  • 2 cups of milk,
  • 2 teaspoons of vanilla extract and grated nutmeg


In a large bowl, beat the egg whites until stiff, but not dry, Gradually adding in the sugar. Beat the yokes in another large bowl until they are lemon yellow. Fold in the egg whites. In a third bowl, beat the cream until stiff, then add it to the eggs along with the milk and flavoring while stirring, then chill. Sprinkle with grated nutmeg before serving. The eggnog may need a gentle stirring beforehand.


Hot Mulled Cider

Ingredients: 1 / 4 of a cup of whole cloves, 1 / 4 of a cup of broken cinnamon sticks, 1 / 4 of a cup of allspice, 1 / 4 of a cup of dried orange peel in small bits and 6 cups of apple cider

Mix the first 4 ingredients in a large jar and set asside. In a large pot, combine the cider with six tablespoons of the mixed spices. Cover and simmer for 10 minutes. Reserve the rest of the spice mix for other batches. Strain and serve hot. Garnish with a whole cinnamon stick.


Hot Mexican Chocolate

The following recipe serves from 8 to 10 people.

Ingredients: 2 tablets of Mexican chocolate, 1 / 4 of a cup of water, 1.9 liters or 2 quarts of milk, whipped cream and cinnamon

Gently melt chocolate tablets in water over very low heat, When the chocolate is dissolved, add the milk then stir and heat to just under the boiling point. Remove from heat and pour into a jug or pitcher. Beat with a whisk until foamy, or use the traditional tool, a molonello.. Serve topped with whipped cream and a dash of cinnamon if you like.
